Makes a delicious oatmeal cookie. I’ve been playing around with slightly healthier sweeteners and fats. First of all, I add 1/2 cup coconut to this recipe. Then I blend the oats until they’re finer in consistency. I replace half a cup of the brown sugar with coconut sugar and the full amount of the white sugar with monk fruit baking sweetener. Then I swap the 4 tbsp of butter that aren’t browned for the equivalent weight in low-fat green yogurt. Lastly, if you have the time, refrigerate the dough for 36 hrs before baking.
